Help with Breaking the Fast

I am currently at day 38 of my 40 day fast (26 days of juice and the last 14 on water). I am worried about breaking the fast.
I have a plan to move back to juice and vegetable soups (it is winter here now and quite cold). I think I will be fine for the next two weeks with juice, soup and adding back fruit and vegetables, but I am worried about after then.
So many friends and family want to eat out with me, having not been able to for 3 months. I don't want to fall back into old habits.
I plan to do a 1 day fast each week, and to do another 7 or 14 day fast in a month or so. I really don't want to undo all the good work that I have done so far.
Any suggestions?
