In my experience..

I water fast for ten days, three times a year, for cleansing.

Immediate weight gain after ending my fast is usually related to gaining water, and the fact that my digestive system, which was, thanks to healthy enemas, pretty much empty of the usual eight-to-ten pounds of stuff it usually contains, is starting to fill up again.

However, I have also found that unless I exercise more than normal and eat a very low carb diet for about two weeks after my fast, I regain any fat loss within about ten days, every single time.

Yes, because much of the weight if from water loss. You will still keep some of it off but eating food (esp with salt) helps the body to retain water.
