Water Fasting Every-Other-Day Works Great For Me

I am about 20 pounds overweight, 2 weeks ago I started fasting every other day. The other days I eat healthy, meaning 2 apples for breakfast, lots of green tea in the morning and for lunch I eat steamed vegetables with chicken and more fruit during the afternoon.
But do not eat dinner, I think everyone loses weight differently but for me this seems to work well I lost about 4 pounds each week. I also drink lots of water, about 4,5 gallons of still water each day as mentioned before about 4-5 tall glasses of green tea until about noon. I worry about drinking more green tea since I already am a light sleeper.
The days I fast I also work and I am really good with it. I feel great in the morning after my fasting days. For regular bowel movement I eat activia yogurt which is supposed to promote healthy bowel movement and it seems to work just fine for me.
I take vitamin supplements daily and as mentioned eat very healthy ( at least I think so) during my non fasting days.
The start was indeed difficult, but once I started and ended my first week checking me weight after that week it was great motivation. Of course I realize that I cannot fast 3 days forever but have to always eat healthy but it is just great motivation and I do believe fasting is healthy.
For me its just that I need motivation and if someone tells me I need to lose a pound a week to lose weight healthy it is just not motivating. I also work out about 4-5 times a week doing yoga on fast days and cardio on non fasting days. I know it will be difficult to go back to eating every day but I plan to do this slowly meaning going from 3 days to 2 to 1 ecc.
I thought about doing a week of water fasting but I also worry about loosing weight too much and coming off of an entire week.
Is someone else doing every other day fasting? I would love to hear how you're doing and if there are other tips. I worry about a weight plateau :(
